They’re one of Wales’ most recognisable and delicious foods, and what better time to make Welsh cakes than St. David’s Day! We’ve been busy whipping up a few batches for the office, and here’s the recipe so you can make some of your own.
Ingredients;
– 225g plain flour
– 50g butter
– 50g lard
– ½ tsp mixed spice
– ½ tsp baking powder
– 85g caster sugar
– 1 egg
– Milk
– 50g currants
Recipe
– Get a good sized bowl, and add in the baking powder, a pinch of salt, caster sugar, mixed spice and flour.
– cut the butter and lard up into small pieces, and slowly rub them into the mixture using your fingers, until it’s all well combined and crumbly.
– add in the currants. Currants are traditionally used, but if you’re feeling adventurous try something different, like chocolate chips or coconut!
– Work in the egg until the dough is good and soft, adding a little splash of milk if the mixture is a bit too dry.
– put some flour down on your worktop, and roll the dough out to about the thickness of your little finger. Using a knife or cookie cutter cut out circles roughly 6 cm across.
– Grease a griddle pan or heavy frying pan (or a bakestone if you’re being really traditional!) and place on a medium heat.
– Cook for about 3 minutes on either side until each side is golden brown.
– Sprinkle on some more sugar, and enjoy them warm! Or if you want, cut each Welsh cake in half, spread on some jam and sandwich back together for jam splits!
